I had some cubed, cooked sweet potatoes left over from the Turkey and Sweet Potato Chili that I made earlier this week, and I was craving something hearty and healthy for breakfast. We eat a lot of oatmeal in this house, and I got the wild idea to add the sweet potatoes to my morning oatmeal. Here’s what I did:
two packets of plain instant oatmeal
a splash of hot water
single serving cup of no-sugar-added applesauce
about 1/3 cup of diced, cooked sweet potato
a few dashes of cinnamon
a splash of 2% milk
Mix all of the above (except milk) together in a microwave safe bowl. Microwave until hot. Splash with cold milk. Enjoy.
Other ideas for additions:
– walnuts or pecans
– raisins (golden raisins for an even prettier concoction)
– sliced banana
– grated, cooked carrot
– coconut with coconut milk drizzle
– dried cherries, cranberries, or apricots
