RECIPE: Easy Lemon White Chocolate Fudge

I’m a sucker for lemon sweeties, my friends. When I recently found out that you can make “fudge” (I’m putting it in quotes because this really isn’t “fudge”…fudge is much more complicated than this…fudge is my mom attempting three or four times to get the damn stuff JUST right at Christmas time, and still having to give up the attempt) with just chocolate chips and a tin of CAKE ICING, I had to try it. I got a little fancy and added some lemon zest to the mix, but I don’t think it is even necessary to add flavor, and the pink sprinkles were just for fun.

Here’s what you do:

Ingredients and directions:
one bag of white chocolate chips
one container of lemon icing

Microwave the chips for 60 seconds, stir. Microwave for another 30 seconds, stir.

Add in the icing, and microwave for another 60 seconds. Stir. Then microwave for another 30 seconds, stir again.

Pour into a greased 8×8 glass pan, and put in the ‘fridge so it sets. Enjoy, and marvel at how wonderful the taste and texture is, and try not to think about what you’re actually eating.

The possibilities are endless for what you can make with chips and icings. I made strawberry fudge for Superbowl weekend with the white chips and strawberry icing. Chocolate covered strawberry fudge? Sure! Strawberry icing with dark chocolate chips. German chocolate fudge? German chocolate icing with chocolate chips! Yum Do you have any ideas for great combinations?
