I originally made this recipe in January, and I find myself dreaming about it right now. I just started a modified diet, and I think this chicken would actually be suitable to eat even under the guidelines of my new eating habits! I think I’m going to have to make it soon and stash some in the freezer. And it is SO easy to make.
24 ounces of your favorite salsa
Juice from two limes
A 1.25 ounce package of taco seasoning (we prefer to make our own taco seasoning these days)
several heaping teaspoons of diced jalapenos (we like Mount Olive brand, and it is your choice how much you add…even better would be to use fresh)
six boneless skinless chicken breasts
Toss it all into the crockpot and cook on low for six hours. The chicken will virtually disintegrate into shredded deliciousness. You could actually even serve this as a dip with Fritos scoops and some sour cream, or use it as a filling for tacos or burritos. It would even be GREAT served cold on an iceberg salad, with some chipotle-ranch dressing, fresh tomatoes, avocado, and tortilla strips for crunch.
I’ve also added a can of drained black beans, and it is even tastier.
